Red fruit aromas predominate with notes of fennel, aniseed and rose talc.

On the palate it is sweet and fresh, with good acidity and good length.
SERVICE: We recommend serving it chilled, around 8ºC.

DESIGNATION OF ORIGIN: Alicante
AGEING: Young
VARIETIES: Monastrell - Syrah
VINEYARD: Located at an altitude of 650 metres in the "La Serrata” Estate, Villena-Alicante.
SOIL: Sandy, limestone soils with high permeability and low salinity.
HARVEST: Each variety is harvested separately, as they have different ripening times. The grapes are harvested mechanically at night, thus avoiding oxidation and high daytime temperatures.
PRODUCTION: Each variety is prepared separately in stainless steel tanks. After a short cold maceration, the must is bled off and the indigenous yeast is left to ferment at a temperature not exceeding 15ºC.
