TASTING NOTES

It has a ruby red colour with terracotta glints.
Intense aromas of chocolate, cocoa, ripe figs and carob subtly combined with notes of fine wood, clove, cinnamon, pipe tobacco and nuts such as hazelnuts and almonds.
Very long, very tasty, sweet but with balance. With good acidity and structure, which gives it a very long finish.

DESIGNATION OF ORIGIN: Alicante
AGEING: 14 months in 500-litre French oak barrels of various uses so that the toasted and smoked notes are very subtle. This small amount of oxygen transfer that refines the wine without smokiness is very interesting.
VARIETIES: 100% Monastrell
VINEYARD: Situated at an altitude of 650m, in the heart of the Alto Vinalopó and in the heart of Puerto de Salinas. In our beautiful "La Serrata" estate (Villena, Alicante).
SOIL: Sandy loam soils with high drainage, low salinity and very calcareous.
HARVEST: Monastrell harvested very ripe, almost raisin-like, organically grown and harvested in small boxes of 10 kg.
PRODUCTION: The grapes are carefully transported to the winery for cold maceration and gentle pumping over in small stainless-steel tanks. Fermentation is carried out with wild yeasts that become active with the arrival of winter, leaving part of the sugars to ferment and giving us this precious sweet wine.
